The yerba mate tree is an evergreen from the Holly family that grows in the subtropical forests of South America. The infusion, is prepared by steeping dry leaves in hot rather than in boiling water. Drinking mate with friends from a shared hollow gourd with a cane or metal straw (a bombilla in Spanish) is a common social practice in Uruguay, Argentina and southern Brazil among people of all ages. The gourd is passed clockwise, often in a circle and each person finishes the gourd before giving it back to the brewer. Since mate can be rebrewed many times, the gourd is passed until the water runs out. 
Rooibos is a caffeine-free, healthy alternative to black tea. It produces a full-bodied infusion, packed with antioxidants. Rooibos means 'red bush' in Afrikaans. Rooibos only grows in a small area 250 km north of Cape Town in the rugged Cedarberg area and no alternative source of this unique product is available anywhere in the world. The indigenous shrub-like Rooibos plant has thin, needle-like leaves of about 10 mm in length which are green when harvested in summer, but turn a beautiful dark red during fermentation.  Traditionally, the green leaves and stems of the plant are crushed and “fermented” overnight before being spread out to dry in the African sun. The fermentation step is an oxidation process caused by enzymes and chemicals naturally present in the plant which produce the typical red colour.

Green Tea Sencha is the most widely enjoyed green tea in Japan. It can be recognised by its shiny, needle-like shaped tea leaves with strong fragrance. Along with the springtime blossoming of cherry trees, the first harvest of sencha is highly anticipated and celebrated. It's thought to be the first taste of the coming year in tea and very lucky to give as a gift. This first harvest is referred to as "shincha".

Ceremonial Matcha Green Tea is a premium tea powder which has been used in traditional Japanese tea ceremonies for nearly a millennium.
